Banana Nut Bread
EASY 1 HOUR AND 45 MINUTES
• ½ cup coconut oil (can substitute with butter or vegetable oil)
½ cup sugar
2 eggs
1 cup plain flour
1 tsp baking soda
3 bananas
½ cup raisins
½ cup walnut
TIP
If coconut oil is solid, you can melt the oil in the microwave for 2 minutes. Cover the bowl with a paper towel to avoid splashing.
1 Beat eggs in a large bowl. Add oil and sugar, beat the mixture for 2 minutes.
2 Add in plain flour and baking soda, stir dough well until it’s smooth.
3 Add 3 bananas (break bananas into small pieces), mix well with dough.
4 Add raisins and walnuts. Mix well.
5 Lightly oiled baking dish, pour dough into dish.
6 Preheat the oven at 325F and bake for 1 ½ hour.
7 Test if bread is ready by sticking a wooden stick (chopsticks) into the bread. If there is no soft dough attached to the wooden stick, the bread is cooked.
