Cantonese Style BBQ PORK
EASY 1 HOUR / MARINATE OVERNIGHT
• 3 pounds skinless pork belly or pork shoulder
• 4 tbsp honey
• 2 tbsp soy sauce
• 1 tbsp rose essence cooking wine
• 1 tbsp garlic chilli sauce
• 1 tbsp oyster sauce
• 1 tbsp hoisin sauce
• ½ tsp five spices powder
• 2 tsp dark soy sauce
• 2 tsp paprika (optional for color)
• 1 piece of Chinese fermented bean curd (optional for color)
• 1 tsp red yeast powder (optional for color)
1 Cut pork into 2-3 cm thick pieces. Poke around pork with a fork, this helps to speed up the seasoning process.
2 Mix Char Siu Sauce ingredients together.
3 Put the pork into a plastic bag. Add in the mixed Char Siu Sauce. Close the bag, then give the pork a full body massage to ensure it is well covered with seasoning mixture.
4 Press to release the air from the bag. Close the bag and marinate pork overnight or at least 10 hours.
5 Add some cornflour after marinating, which will lock the juice inside the meat.
6 Preheat the oven to 425F. Place pork on a rack with a tray under (line the tray with aluminium foil). Brush pork evenly with 1 tbsp honey. Put pork inside the oven to bake for 20 minutes.
7 When one side is grilled, turn to the other side. Brush off the juice on the pork so that the honey will stay better. Brush 1-2 tbsp honey on pork. Put pork back into the oven to bake for 15 minutes at 425F.
8 Remove pork from the oven and check if the meat is cooked. Brush 1 tbsp honey on pork. Ready to serve.
