TIP
To freeze cooked pork - do steps 2-6. When pork is cool off, place it in a freezer bag. Pork can be freezed up to 3 months.
When you want to serve this dish, thaw pork for about 30 minutes at room temperature. Do steps 1 and steps 9-13.
Chop bell peppers and pineapples into bite size pieces.
Clean pork and chop into 1 ½” x 1” pieces. Marinate pork with soy sauce, salt, sugar, and ground pepper. Mix well, add ½ beaten egg. Marinate for 10 minutes.
Place corn flour on a plate. Prepare 1 ½ beaten eggs.
Cover pork with corn flour one by one. Dip in egg mixture, then cover with corn flour again. Put pork pieces on a plate to be fried later.
Heat 2 ½ cups of oil in a pot. Check the temperature of oil with wooden chopsticks. The oil is ready when bubbles form around the chopsticks.
Place pork one by one into a pot. Remove excess batter. Fry pork with medium heat for about 9 minutes. Remove pork and test if it's done. The pork is cooked if it can be easily pierced through.
Rest for over 5 minutes before frying again to make the batter crispier.
You can wait until dinner is ready before frying the second time.
Heat oil until bubbles form on the side. Deep fry pork for 1 to 2 minutes until the batter has turned golden. Place pork on a paper towel to absorb extra oil. Take all the pork out before turning the heat off.
Put 1 tbsp oil in the pan. Stir fry bell peppers for 30 seconds, take out for later use.
To make the sauce, heat the pan with medium low heat. Add 1 tsp oil, fry the tomato paste, add 2 tbsp water into 6 tbsp vinegar, then add into the pan. Add sugar, salt and ketchup. Taste the sauce to check if it needs more seasoning. Add some cornstarch water to thicken the sauce, turn to low heat.
Add in pork, peppers and pineapple. Mix well.
Dish up. Serve hot.
