Crispy Salt and Pepper Tofu
EASY 30 MINUTES
• 1 box soft tofu
• 1 tbsp salt
• 2 tsp sugar
• ½ cup hot water
• ¾ cup cold water
• 2 tbsp Thai Sweet Chili Sauce
• 1 tsp ketchup
• 1 tbsp chopped peanuts (optional)
• 1 tsp sesame seeds (optional)
1 Cut tofu into 6 big square pieces.
2 In a bowl, put in 1 tbsp salt and 2 tsp sugar, then add ½ cup hot water to dissolve it. Add ¾ cup cold water. Mix well. Cover tofu completely with salt water mixture in a deep dish for 30 minutes.
3 Make dipping sauce -- add 2 tbsp Thai Sweet Chili Sauce and 1 tsp ketchup in a small bowl, mix well. Sprinkle chopped peanuts and sesame seeds on top.
4 Place marinated tofu on a clean kitchen towel. Gently pat excess water out of tofu. Cover with the towel to soak water for 3 minutes.
5 In a pot, add just enough oil that can cover ⅔ of the tofu pieces. Turn heat to high. The oil is ready when bubbles boil around the chopsticks.
