Fried Shrimps with Soy Sauce
MEDIUM 30 MINUTES
• 15 large shrimps
• ½ red bell pepper
• ½ onion
• 2 stalks green onion
• 1 tsp ginger (minced)
• 1 tsp garlic (minced)
• 1 small shallot
• 4 small dried chili pepper
• 1½ tbsp light soy sauce
• 1 tbsp cooking wine
• Sesame oil
• Ground pepper
• ½ tsp dark soy sauce
• 1 tbsp cornstarch
• 1½ tbsp sugar
1 Defrost frozen shrimps thoroughly before cooking.
2 Use a pair of scissors to remove legs and spikes to the shrimps. Cut the back of the shrimps open and remove the veins gently.
3 Rub 1 tsp salt gently on the shrimps to remove slime. Wash off the salt thoroughly with water.
4 Drip dry the shrimps for approx 10 mins. Pat dry with a kitchen paper towel.
5 Slice half of an onion. Cut spring onions into small chunks. Slice half of a red pepper. Chop shallot, garlic and ginger.
6 Cover shrimps with 1 tbsp cornstarch, so shrimps become crispy when fried.
7 Mix 1½ tbsp light soy sauce, ½ tsp dark soy sauce and 1½ tbsp sugar in a bowl.
8 Heat wok, add 2 tbsp oil. Stir fry onion for 3 minutes, place shrimps in wok one by one. Fry for about one minute on medium high heat before flipping them over. Fry for another minute until the shrimps turn golden. Place cooked shrimps and onion on a plate.
9 Add some oil to stir fry chopped ginger and shallots for a short while. Add in chopped garlic, stir fry for about 1 minute. Add red bell pepper, stir fry for a short while. Pour in 1 tbsp cooking wine.
10 Add soy sauce mixture. Add in onion, shrimps and spring onion, stir fry for 1 minute.
11 Finally add a dash of sesame oil, and the dish is ready.
12 Dish up. Serve hot.
