Lemon Blueberry Bread
EASY 2 HOURS
• 2 cups all purpose flour
• 1½ tsp baking powder
• ½ tsp salt
• 1 stick unsalted butter (or ½ cup coconut oil, olive oil or vegetable oil)
• 1 cup sugar
• 2 eggs
• 2 cups blueberries (12 oz)
• 3 tsp lemon zest
• 4 tsp lemon juice
• ¾ cup plain yogurt, regular or lowfat
1 Preheat oven to 350F. Spray a loaf pan with nonstick cooking spray, set aside.
2 In a large bowl, whisk together flour, baking powder and salt.
3 Cream together butter (or oil) and sugar until light and fluffy. Add in eggs, beat well. Add yogurt and lemon juice, then add the flour mixture. Mix well.
4 Fold in blueberries and lemon zest. Try not to crush the blueberries.
5 Scoop batter into the prepared loaf pan. Bake for 1 hour and 45 minutes or until golden brown.
6 Test if bread is ready by sticking a wooden stick (chopsticks) into the bread. If there is no soft dough attached to the wooden stick, the bread is cooked.
7 Let cool on the pan for 10 minutes before inverting gently onto a plate.
