Quinoa Salad


EASY   15 MINUTES



Ingredients:
•  1 cup quinoa (rinsed & cooked according to package)
•  1 cup shredded carrot
•  1 stalk of celery chopped
•  ¼ cup chopped parsley
•  ½ teaspoon salt
Dressing:
•  3 tbsp fresh lemon juice
•  ¼ cup extra virgin olive oil
•  ½ tsp salt & fresh ground pepper
•  Splash of Bragg’s Liquid Aminos (optional)

Method:


1    Gently mix cooled cooked quinoa with carrots, celery, & parsley in a large bowl.

2    Whisk together dressing ingredients separately.

3     Pour dressing over salad, toss gently & chill until serving time.
