Red Bean Soup
EASY 1.5 HOURS
• 2 cups red bean
• 2 bars of sugar cane slab sugar
• 2 pieces of dry tangerine peel (optional)
• 10 cups water
1 Rinse red beans, soak in a bowl of water for 2 hours. Drain well.
2 Pour 10 cups of water in a pot, add in tangerine peel and red bean.
3 Bring to boil then turn to medium low heat, cook for 1 hr 15 minutes. Stir occasionally and make sure water is not evaporated too fast.
4 Do not add sugar before the beans are cooked, otherwise the beans will not be softened.
5 After cooking for 1 hr 15 minutes, ⅓ of the water in the pot should have evaporated.
6 Now add 2 bars of slab sugar into the pot. More sugar can be added to make the soup sweeter.
7 Red bean soup is ready when the red beans have softened and the sugar has melted. Serve hot.
