Singapore Stir Fried Noodles
MEDIUM 30 MINUTES
• 1 cup pork
• 12 small/ medium size shrimp
• 2 packs of dried rice noodle
• 2 eggs
• ½ green bell pepper
• ½ red bell pepper
• ¼ onion
• 1 bundle of green onion (cut into 2 inch sessions)
Option 1
• Curry paste -- (1½ tbsp curry powder + ½ cup hot water)
• ¼ tsp five spices powder
• 1 tbsp light soy sauce
• ½ tsp sugar
Option 2
• ¼ tsp turmeric powder
• ½ tsp curry paste
• ½ tsp fish sauce
• ¼ tsp salt
• ¼ tsp soy sauce
• ½ tbsp soy sauce
• A pinch of ground pepper
• ½ tbsp cornstarch
• 1 tbsp water
TIP
Can substitute pork with cooked Chinese BBQ pork
1 Clean and cut pork into thin strips.
2 Marinate shrimp with ⅛ tsp salt, ¼ tsp cornstarch and a pinch of ground pepper. Mix well.
3 Marinate pork - add ½ tbsp soy sauce, a pinch of ground pepper, ½ tbsp cornstarch and 1 tbsp water, mix well.
4 Place both pork and shrimp in the fridge for 1 hour.
5 Prepare noodles -- put noodles in a pot of boiling water. Loosen noodles. Turn heat off and soak noodles for 15 minutes until it’s about 80% soft. Put noodles in a colander, drain well. Soak excess water with a kitchen paper towel. Cover noodles with a clean wet kitchen towel for 20 minutes. (This process is important for a good noodle texture)
6 Clean bell peppers and remove seeds, then cut into thin strips.
7 Scramble eggs in a bowl. Heat frying pan, add 1 tbsp oil. Fry eggs until cooked. Cut into thin strips. Set aside for later use.
8 Turn heat to low, add 1 tbsp cooking oil. Fry rice noodles for 1 minute, turn to the other side, fry for another 1 minute. Place noodles on a plate, use a pair of scissors to cut noodles a few times so it’s easier to toss when cooking. Set aside for later use.
9 Using the same frying pan, turn heat to medium, add 1 tbsp cooking oil. When oil is hot, pan fried shrimps until cooked. Place shrimp on a plate, set aside.
10 Add 1 tbsp cooking oil in pan, turn heat to high. Add pork, fry until it’s half cooked. Push pork to the side of the pan. Add some oil on the empty side, stir fried onion for about 2 minutes. Then add bell pepper strips, stir fry for 1 minute. Mix all ingredients well. Cover pan with lid for 30 seconds. Add seasoning, stir fry and mix well.
11 Add rice noodles, loosen noodles and mix well with all the ingredients. Add shrimp and cooked egg strips on top of noodles. Dish up and serve hot.
