Soft Tofu with Minced Pork in Sichuan Sauce
MEDIUM 30 MINUTES
• 4 oz minced pork
• 1 box of soft tofu
• 2 cloves of chopped garlic
• 1 tsp chopped ginger
• 1 shallot (chopped)
• 1 bundle of cilantro (chopped)
• 1 tbsp chopped green onion
• 1 tsp sugar
• 1 tsp soy sauce
• 1 tsp cornstarch
• ½ tsp sesame oil
• 1 ½ tbsp hot bean chilli paste
• 1 tsp red chilli powder
• 1 tsp sesame oil
• Cornstarch water (1 tsp cornstarch and 1 tbsp water - mix well)
• ¾ cup chicken stock
• ½ tsp oyster sauce
1 Cut tofu into cubes (about 1 inch). Wash and finely chop cilantro and green onion.
2 Add soy sauce, cornstarch, sugar and sesame oil to marinate pork for 5 minutes.
3 Heat wok, add 1 tsp oil, turn to medium low heat. Put in chopped ginger and shallots. After a while, add in garlic. Gently stir fry pork for 3 minutes, then remove from wok for later use.
4 Add 1 tbsp oil, use very low heat to fry the red chilli powder for 1 minute. Then add hot bean chilli paste and pork, stir fry.
5 Turn heat to medium, add in chicken stock, 1 tsp sugar and 1 tsp soy sauce, ½ tsp oyster sauce bring to boil. Then add in tofu, cover the lid to cook for 4 minutes with medium-high heat.
6 Taste if more seasoning is needed. Add in cornstarch water to thicken the sauce.
7 Add 1 tsp sesame oil. Sprinkle cilantro and green onion.
8 Dish up. Serve hot.
