Steam Eggs with Dried Shrimps and Vermicelli

• 4 large eggs
• 1½ tbsp dried shrimps
• 1 small bundle of Vermicelli
• 1 tbsp green onion
• ¼ tsp salt
• ½ tsp sugar
• ½ tsp chicken powder
• 2½ cups water
• ½ tsp sesame oil
TIP
Water to egg ratio -- 1 : 2.5 (that means if you have 1 cup beaten eggs, you need to add 2½ cups of water). You can substitute milk or chicken stock for some of the water if you prefer.
1 Soak dried shrimps and vermicelli noodles until softened.
2 Mix chicken powder, salt and sugar into 2½ cups of water.
3 Beat eggs, add eggs into water mixture. Mix well.
4 Add dried shrimps and vermicelli (bean thread) to egg mixture, mix well. Pour into a steam plate, cover with plastic food wrap.
5 Pour 6 cups of water into the streamer, put the plate on the rack. Cover the lid, turn heat to high and bring to boil. Steam for 2 minutes then turn to low heat, steam for another 10 minutes. Turn off heat. Leave it for about 18-20 minutes (Do not remove the lid).
6 Put green onion on the dish to garnish.
7 Pour in 1 tsp olive oil, ½ tsp sesame oil and 1 tbsp soy sauce on the egg custard.
8 Dish up. Serve hot.
