Steamed Pork Ribs with Black Bean Sauce


EASY   45 MINUTES



Ingredients:
•  10 oz spare ribs 
•  1 red chilli (optional)
•  1½ tsp fermented black bean (wash before use)
•  4 cloves garlic (chopped)
Marinade:
•  1½ tsp cornstarch + 1 tbsp water (mixed)
•  1 tsp cooking wine
•  1 tsp sugar
•  2 tbsp soy sauce
•  ¼ tsp oyster sauce
•  a little bit of ground black pepper
•  1 tsp sesame oil
TIP

Can prepare the spare ribs the day before, marinate overnight and steam the next day before serving.

Method:


1    Wash spare ribs and cut into bite size pieces. Remove extra fat.

2    Heat saucepan, add 1 tbsp cooking oil. Fry ½ of the garlic until golden brown, reserve aside.

3     Rinse black beans, drain well. Dice black beans finely to release flavor more.

4    Add cornstarch water mixture into spare ribs which gives a silky texture.

5    Add cooking wine, mix well until the liquid is absorbed.

6    Add soy sauce, sugar, black beans, oyster sauce, raw garlic, ground black pepper, mix well. Then add sesame oil and fried garlic.

7    Marinate for at least 30 minutes.

8    Pour spare ribs on a steaming plate, add red chilli on top.

9    Add 6 cups of water in a pot or wok, bring to boil. Use medium high heat to steam spare ribs for 12 minutes. Turn heat off, let it sit for 4 more minutes with the lid covered.

10    Dish up. Serve hot.
