Steamed Pork Ribs with Pickled Plum


EASY   45 MINUTES



Ingredients:
•  10 oz pork spare ribs
•  2 pickled plums
•  1 tbsp finely chopped garlic
•  Some chopped chillies
•  2 tbsp chopped cilantro and green onion
Marinade:
•  1 tsp soy sauce
•  1½ tsp cornstarch in 1 tbsp water
•  1 tsp ground bean sauce
•  1 tsp sugar
•  1 tsp sesame oil
•  2 tsp cooking oil
TIP

Can prepare the spare ribs the day before, marinate overnight and steam the next day before serving.

Method:


1    Wash pork ribs and pat dry with a paper towel. Chop into bite size pieces.

2    Marinate the ribs, add in soy sauce first, then add 2 mashed pickled plums (just add 1 if you prefer not too sour). The acidity from the pickled plum can tenderize the pork. Add 1 tsp ground bean sauce, 1 tsp sugar, mix well.

3     Add in the finely chopped garlic. Lastly, add in cornstarch water to give the pork a smooth texture. Mix well.

4    Add in 1 tsp sesame oil and 2 tsp cooking oil.

5    Add in chopped chillies, mix well.

6    Marinate for 30 minutes. Separate the meat from each other before steaming.

7    Place 6 cups of water in wok, bring to boil. Steam for 12 minutes, turn off heat. Leave ribs in wok for 3 minutes. The ribs are cooked when they can be pierced through easily with a bamboo stick. Sprinkle with chopped cilantro and green onion.

8    Dish up. Serve hot.
