Stir Fried Napa Cabbage with Dry Shrimp

• 8 oz Napa cabbage
• 2 slices of ginger
• 1 tbsp dry shrimp
• 1 small bundle of vermicelli bean thread
• ¾ cup chicken broth, vegetable broth or water
• ½ tsp salt
• ½ tbsp soy sauce
• ⅓ tsp sugar
• a dash of sesame oil
• a pinch of pepper
TIP
Add cornflour mixture gradually and just add enough to thicken the sauce. Don't have to pour in the whole amount.
Do not overcook cabbage.
1 Soak dry shrimp and vermicelli bean thread until soft.
2 Rinse and drain Napa cabbage, cut into chunks.
3 Mix seasonings until sugar dissolves.
4 Heat 2.5 tbsp oil to saute ginger slices. Stir fry dry shrimp for a short while until you can smell the shrimp smell.
5 Add Napa cabbage, stir fry for 1 minute. Sprinkle a little bit of wine. Add vermicelli bean thread, pour in seasonings, stew until cabbage is tender.
6 If the sauce is watery, thicken with cornflour mixture (1 tsp cornflour and 2 tbsp water).
7 Dish up and serve hot.
