Stir Fried Udon Noodles with Pork and Vegetables


MEDIUM   30 MINUTES



Ingredients:
•  4 packages of udon 
•  2 celery stalks 
•  1 carrot
•  1 small onion
•  8 oz pork
•  3 cloves garlic (chopped)
Seasoning:
•  1 ½ tbsp light soy sauce
•  1 tbsp dark soy sauce
•  ½ tsp chicken powder
•  2 tsp sugar
•  ¼ tsp five spice powder
•  1 tsp sesame oil
•  ½ tsp salt
•  ½ tsp oyster sauce
TIP

Can use your favorite vegetables like bean sprouts, mushrooms instead of celery.

Method:


1    Wash celery, onion and carrots, slice into thin strips.

2    Slice pork into strips. Marinate with 1 tsp soy sauce, ½ tsp cornstarch and ½ tsp sugar for 15 minutes.

3     Add 4 cups of water in a pot, bring to boil. Cook udon noodles until it is softened. Rinse noodles in cold water, drain well and put aside for later use.

4    Heat wok, add 2 tsp cooking oil. Add in finely chopped garlic, stir fry pork strips to golden brown. Add in five spice powder, stir fry and mix well. Remove pork from wok and set aside for later use.

5    With the remaining oil in the wok, fry carrots and onion. Stir fry for about 3 minutes. Add in celery, stir fry for about 30 seconds then sprinkle ½ tsp salt. Vegetables taste better when stir fry in high heat. Do not cover it with a lid, otherwise vegetables will turn soggy. Salt can soften the vegetables. Put vegetables on a plate for later use.

6    Use a clean wok, add ½ cup of water to cook the udon. Bring it to boil before adding in udon. Add all the condiments (soy sauce, dark soy sauce, chicken powder, oyster sauce and sugar) into the wok. Mix well then cover with a lid. Use medium heat, cook for 2 minutes, then take the lid off.

7    Add in vegetables & pork. Stir with chopsticks from bottom to top.

8    Add 1 tsp sesame oil. Mix well. Dish up. Serve hot.
