Stir Fried Water Spinach with Fermented Bean Curd

• 1 lb water spinach*
• 1 tbsp chopped garlic
• 2 tsp shredded ginger
• 1 tsp shredded chilli
• 2-3 blocks of fermented bean curd*
• ½ tsp sugar
• 2 tsp fish sauce
• 2 tsp cooking wine
1 Wash and split the vegetables into smaller pieces by hand. The end is usually brown and tough, and should be removed.
2 Mix 2 tsp cooking wine with fermented bean curd. Smash it.
3 Heat the wok until it’s hot. The wok must be hot when stir frying vegetables. Then add 2 tbsp cooking oil. Turn heat to medium to stir fry the condiments- ginger, garlic, fermented bean curd sauce. Fry until fragrant. Add in shredded chilli.
4 Turn to high heat, add water spinach when the oil is hot. Add in ½ tsp sugar and mix the condiments in with the vegetables. Stir fry for 2 minutes, add in 2 tsp fish sauce. Mix well. Cover with a lid and cook for 1 minute.
5 The vegetables are cooked. Dish up and serve hot.
