Stir Fried Yu-Choy with Pork
EASY 20 MINUTES
• 4 oz of pork
• 1 lb yu-choy*
• 4 slices of ginger
• ¼ tsp cornstarch
• 1 tbsp soy sauce
• ¼ tsp salt
• ½ tsp sugar
TIP
Be careful not to overcook the yu-choy.
1 Slice pork thinly, marinate for 15 minutes. Coat pork slices with a little bit of oil.
2 Wash yu-choy and cut into sections.
3 Heat wok in high heat, add 1 tbsp oil. Add in pork when oil is hot. Stir fry until cooked. Remove pork from wok and leave aside for later use.
4 Clean wok, turn heat to high, add 1 tbsp cooking oil. Add ginger slices, stir fry for 1 minute then add yu-choy, 2 tbsp water and ¼ tsp salt, stir fry to mix well. Cover lid for 1 minute, then remove lid to stir fry for 2-3 minutes until the vegetable is tender.
5 Add pork slices back to wok and mix well.
6 Dish up. Serve Hot.
