Tofu with Fermented Black Beans
MEDIUM 30 MINUTES
• 1 pack of tofu
• 5 oz minced pork
• 1 chili pepper
• 1 tbsp of fermented black bean
• 2 tbsp chopped green onion & cilantro
• 1 tbsp chopped garlic
• 1 tbsp chopped ginger
• ⅓ cup chicken stock
• 2 tbsp soy sauce
• 1 tbsp ground bean sauce
• 1 tsp chili bean sauce
• 2 tbsp sugar
• ¼ tsp salt
• ½ tsp oyster sauce
• 1 tbsp cooking wine
1 Soak fermented black bean in a bowl of water for 10 minutes. Chop the black beans finely. Remove seeds from chili pepper and cut into rings.
2 Cut tofu into small cubes about ¾ inch squares.
3 Prepare seasonings - mix the stock, soy sauce, ground bean sauce, chili bean sauce, sugar, oyster sauce and salt.
4 Heat 2 tbsp oil in a pan. Stir fry the chili pepper, black bean, chopped garlic and ginger for about 1 minute. Add minced pork, stir fry for a while. Add 1 tbsp cooking wine, keep stir frying and make sure meat does not form lumps.
5 When the pork is cooked, add tofu carefully without breaking it (drain the extra water from the tofu bowl first).
6 Pour in seasonings, stir gently. Turn all the ingredients once without breaking the tofu.
7 Cover and cook for 15 minutes in medium/low heat.
8 When tofu has absorbed most of the sauce, thicken the remainder by adding 1/2 tsp cornstarch mixed with 1 tsp water (optional).
9 Put in green onion and cilantro. Stir gently. Dish up. Serve hot.
